【Ang Mo Kio #1 - Jin Ding Xiang Hong Zao Mian Xian】

Did you know that Ang Mo Kio also means ‘tomato’ in Hokkien? But according to former villagers, tomatoes were never planted here before.

Singapore’s hawker centres are a melting pot of cuisines representing different race and dialect groups. And this week we focus on Foochow cuisine!

If you are looking for Instagrammable spots in Ang Mo Kio, you must visit this colourful corner located near block 724. Besides having some insta-moments, this is where you will find a wide array of authentic hawker food enjoyed by residents for decades.

This place is also where we found Jin Ding Xiang where we dabao this uncommon hawker local delight to showcase FooChow cuisine. The stall owners use natural ingredients and emphasise that they do not include any MSG in every dish served. Their signature claypot dishes include Bak Kut Teh, claypot chicken rice, braised pig’s trotter, and of course Hong Zao Mian Xian.
Jin Ding Xiang Hong Zao Mian Xian Dabao Version
Hong Zao Mian Xian (red glutinous rice wine vermicelli) is not a typical dish that you can find at hawker centres.

This dish features mee sua with wine fragrance, ginger and chicken pieces. The fine and thin noodle symbolises longevity and is often cooked in Chinese herbal soup. Hong Zao is known to be good for blood circulation and is a typical ingredient in nutritious dishes cooked for ladies in confinement. The wine has a slightly sweet and sour taste that makes you keep wanting more.

So, what did #dabaogram do? We requested for an uncooked portion of mee sua so that the noodles would not be too soggy by the time we reached home. We cooked the mee sua for three minutes, then twirled the strands to create a conical centerpiece in the center of the plate. Next, we arranged the chicken pieces around the mee sua "tower". Lastly, we carefully filled the bowl with the scented herbal soup and sprinkled some fresh spring onions to complete our work of art. Viola!📸
